Pine honey is one of Greece’s most iconic and abundant honey types, accounting for around 65% of the country's honey production. Unlike floral honeys, pine honey is a honeydew honey, made not from flower nectar but from the sweet secretions of the Marchalina hellenica insect, which lives on certain pine tree species like Pinus brutia and Pinus pinea. Bees collect this honeydew, enrich it with their enzymes, and transform it into a thick, aromatic, and nutrient-rich honey.
With its dark amber colour, malty taste, and low sweetness, pine honey is highly prized by honey lovers and gourmet chefs alike. It is slower to crystallise due to its low glucose content, staying smooth and pourable for over 18 months.
