Roasted Zucchini, Carrots & Broccolini
Ingredients:
2 zucchinis, sliced into rounds
2 large carrots, peeled and cut into sticks
1 bunch broccolini, trimmed
1 tbsp olive oil
Salt and pepper, to taste
1 tbsp fresh thyme (optional)
2 tbsp Meli Honey
1 tsp lemon zest (optional)
Instructions:
Prepare the Vegetables:
Preheat your oven to 200°C (400°F).
Place the sliced zucchinis, carrot sticks, and broccolini on a baking sheet. Drizzle with olive oil and toss to coat. Season with salt, pepper, and fresh thyme (if using).
Roast the Vegetables:
Roast the vegetables in the preheated oven for about 20-25 minutes, or until tender and slightly caramelized. Halfway through cooking, toss the vegetables to ensure even roasting.
Make the Meli Honey Drizzle:
While the vegetables are roasting, warm the Meli Honey in a small saucepan over low heat for 1-2 minutes, making it easier to drizzle over the vegetables.
Serve:
Once the vegetables are roasted to perfection, remove them from the oven and transfer them to a serving platter.
Drizzle the warm Meli Honey over the roasted vegetables and sprinkle with lemon zest for an added citrusy touch (optional).
