Grilled Lamb Skewers with Halloumi and Red Bell Peppers

Ingredients:

  • 500g lamb shoulder or loin, cut into cubes

  • 200g halloumi cheese, cut into cubes

  • 2 red bell peppers, cut into chunks

  • 2 tbsp olive oil

  • 1 tbsp dried oregano

  • 1 tbsp lemon juice

  • Salt and pepper, to taste

  • Wooden or metal skewers (soaked if wooden)

For the Meli Honey Drizzle:

  • 2 tbsp Meli Honey

  • 1 tbsp olive oil

  • 1 tsp lemon juice

  • Pinch of sea salt

Instructions:

  1. Prepare the Marinade:

    • In a bowl, combine the olive oil, dried oregano, lemon juice, salt, and pepper. Add the cubed lamb and toss to coat evenly. Cover and let marinate in the fridge for at least 30 minutes (or overnight for extra flavour).

  2. Assemble the Skewers:

    • Thread the marinated lamb cubes, halloumi cubes, and red bell pepper chunks onto the skewers, alternating each ingredient. Ensure there's a little space between each item for even grilling.

  3. Grill the Skewers:

    • Preheat your grill or grill pan to medium-high heat. Lightly oil the grill grates.

    • Grill the skewers for about 4-5 minutes per side or until the lamb reaches your preferred doneness and the halloumi is golden and slightly crispy.

  4. Make the Meli Honey Drizzle:

    • In a small bowl, whisk together Meli Honey, olive oil, lemon juice, and a pinch of sea salt until well combined.

  5. Serve:

    • Once the skewers are grilled to perfection, drizzle the Meli Honey mixture over the top while still warm.

    • Serve immediately with a side of Greek salad, pita bread, or tzatziki for a complete meal.
